Molly Barkman joined NC State in January 2024 as an assistant sports dietitian. She has and continues to work with several of the Wolfpack's Olympic sport programs, including women's basketball, men's and women's tennis, softball, baseball, wrestling and gymnastics.
Prior to her role at NC State, Barkman completed two dietetic internships with EXOS in Phoenix while attending graduate school. She provided overall performance nutrition support to the NFL, MLB, Olympic, WNBA, NBA and other professional leagues and supported team doctors, chefs, performance coaches and physical therapists.
As a graduate student from 2021-23, Barkman served as a dietetic intern for the Oklahoma Sooners, supporting the nutrition programs for men's and women's basketball and women's soccer. She was also a sports nutrition intern at Maryland in the summer of 2019.
Barkman was a student-athlete at Longwood University on the women's lacrosse team from 2017-20. She started in 43 of 44 matchups and tallied 63 goals, 36 assists and 99 points across her career. She graduated from Longwood with a Bachelor of Science in Kinesiology in May 2020. Barkman then earned a Master of Arts in Coordinated Program in Dietetics from the Oklahoma Health and Sciences Center in May 2023.
Barkman is a member of the American Sports & Performance Dietitians Association and Academy of Nutrition and Dietetics Association. Her certifications and credentials include MA, RD, LD, ACSM - EP.
